There were many French immigrants in Louisiana with no Acadian ties.

I wouldn’t say completely different. There’s a lot of overlap, especially for anyone who isn’t actually from Louisiana.

One thing I’ve always found kind of interesting is how the connotation of Creole vs. Cajun food differs from the connotation of Creole vs. Cajun people. Much of modern Creole cuisine stems from the food that the “upper class” would have eaten in the early days of New Orleans, while much of modern Cajun cuisine stems from food that the poor Acadians would have eaten. It’s certainly changed over time but the roots of Creole food are more in classical French cuisine while Cajun food is more rooted in survival (with a healthy dose of classical French techniques as well, but more stripped down).

Anyhow, it’s just always struck me as a bit odd because I don’t think most people think about early New Orleans aristocrats when they think about “Creole people.”

Creole has nothing to do with african heritage. A creole can have african (or indian) heritage but doesnt have to. It is the descendants of french and spanish settlers born in the new lands (mostly Louisiana and gulf areas) and predates the acadians.

I think Cajun is a lot more specific while Creole is much more vague, but yes any thinking person knows they are completely different.

Creole has 2 definitions (this one and the african descent one) from one organic geographic location, and cajun has one definition, with 2 distinct types of cajun based on geography

This is the easiest way to summarize the distinctions.
