Do it.
Just retired. Thinking about buying a boat for the family. I don’t fish or like boating. Cost, depreciation, use…all make zero sense to me.
However, this ain’t about me. They would love it. So doing it.
Do it. Time > Money always but particular when you age. Trade some money for great times. Ignore your spreadsheet now and again.
Enjoy!

Not just a stick shift, arguably the best manual gear box of all time

I think you have to! Especially, if the Missus is on board.
I have recently gotten into audiophile headphones and gone down that rabbit hole. Expensive hobby, but fun as hell! So far, my bride of 39 years has been understanding.

Curious what y’all think. I struggle with decisions like this, and I am definitely the kind of guy that doesn’t know how to vacation or have fun.
I'm this person as well. My wife and I bought a 2019 Corvette and we can't justify it, but we have a blast driving it. We're in a similar situation, we're both 41, we have two kids, and are comfortable financially but also can't purely waste money. We look at it this way, if we're able to do everything we need to do (take care of kids, add to savings, max retirement and 401k) then we're fine. If we stop being able to do those things, the 3rd car is the first thing to go.
If you're really struggling with the decision, go used. Odds are if you change your mind you'll be able to recover most of the money you spent.

How long has it been since you have been in a Tesla? The new model Y has a great ride, is super quiet, and has great audio.

I second this. The Model Y is a great car.

After me second son was born, I acquired a 1971 Jensen Intercept III (British Aston Martin competitor with a Chrysler drivetrain to improve reliability and parts availability).
I had a great time driving that car around. I wish I still had it. I was hit head on in it by a guy going the wrong way into a parking garage. Totaled his Jag, did sheet metal damage only to the Jensen Interceptor. The car had a huge tube frame that ran the length of the car - it made the frame and motor (the latter was protected by the frame) very resistant to damage. Mine was black with tan leather, 383 CID engine.
Interior was full of leather - seats, door panels, console). There was also wool carpet. The backseat also had an extravagant amount of leather.
