Spanish is probably most useful but Italian would be my choice. I want to either retire or spend a lot of time in Italy later in life.
My wife is passable in Spanish. There are enough similarities between Spanish and Italian that we could navigate fairly well in Italy with her limited skills and knowing some often used words/phrases.

Arabic, because my biological father’s first language is Arabic and, even though he and his family have lived in the States for many years and speak good English, I think it would be awesome to communicate with them in their native language.

I have sampled every language, French is my favorite. Fantastic language. Especially to curse with. Nom de dieu de putain de bordel de merde de saloperie de connard d'enculé de ta mère. It's like wiping your arse with silk. I love it.

My choice would probably be German or Chinese. Tried to learn a little Mandarin for travel and it was hard.

I'm glad there has been a revitalization of the Cajun Heritage and a lot of the old things are now embraced.
