I've seen better galaxy collisions on the quad.

Yes, I believe we are. The light from THAT IMAGE took 230 million years for it to arrive at Hubble's lens.

The universe is expanding. This does not mean that things are moving away from each other, it just means that are getting farther apart. They still move in relation to one another and sometimes they collide as a result.

Yep.
Now, the reason we wouldn't even notice a change when we collide with Andromeda, is that the space between stars is so massive, that the chance that starts from the 2 galaxies colliding are almost non-existent.
The nearest star to the Sun is about 5 light years away. The odds that an Andromeda star even comes between our Sun and it's nearest star are also very slim.
Of course, with hundreds of billions of stars, and the pull of gravity, there may be some collisions. But they would be very rare.

I think the point is that there is so much "space" between stars / planets there are minimal actual "collisions" in such a scenario. For the large part they just kind of pass through one another and keep on trucking.

Space continues to expand and this is causing the distance between galaxy clusters to increase. However, within clusters, gravity is still king. In our own Local Group, for example, the Milky Way, Andromeda, Triangulum and many small galaxies interact gravitationally.
Gravity also affects the interactions between clusters of galaxies in resistance to Dark Energy, causing the brain-like visage in the pic below. There are billions of galaxies represented in the pic.
