If they're gone, you have either already been exposed or not. Whatever you do at this point will not change anything unless you begin to show symptoms.

The numbers released by LDH include cases/deaths from a wide range of dates. Eventually, they'll be added to the total.

They release #’s once a day at Noon

I am not sure what point to you are trying to make

I’m not sure of procedures but I’m not sure as soon as the person passes the state is called & the death reported
I am nowhere near the medical field but I’m sure there are procedures that have to be followed that cause a lag

Yes, there are lag times on everything. The number of positives cases released today will span the last seven to two days.

how do you know they wont show up in todays numbers? If they died last night they may not even show up until Friday's numbers.

How do you know what the cause of death were? I know for damn sure you arent a doctor.

Yesterday Louisiana went up 1212 cases and 54 deaths. I will assume that was an anomaly and that we will not continue at that ridiculously high 30% rate of increase. I’ll guess 1100 more cases and 45 more deaths.

My biggest question though is what increase in numbers am I allowed to be surprised about? I would be surprised about a case increase of 2000+ and a death increase of 80+. Hopefully that is allowed...

A pair of reasons.

Someone at the hospital who watched the priest give the sacrament of the sick before they passed.

And while I'm not a Dr, I do have a phd.

Alabama has two different death tallies on their site. One is cumulative "Died From", the other is "Reported Deaths". They update the reported numbers as the deaths are reported by hospitals or media. Those deaths are not added to the cumulative list until they have been verified by the ADPH, which includes a review of the death certificate and cause of death. Only when that review is satisfactorily completed is the number updated on the cumulative tally.
