Tell him to think bout his body as a machine. He's putting gasoline in a diesel truck by eating junk food. Explain to him that being hungry after a workout is his body being on "E". It needs to be replenished with lean proteins (diesel), not fatty carbs (gas).
And protein shakes should be a replacement, not An added snack.

Coming from someone who was about as big and is just as hard-headed as he sounds:
There's really nothing you can tell him. I would advise him to log his foods in MFP. Maybe that'll open his eyes to how much he's eating.

Tell him that to be an athlete he needs to eat like an athlete. Eat for fuel not for full.

I walked into break room Thursday and he had a plate of baked chicken, mashed potatoes, red beans, fruit cup, bag of baked lays, and a smoothie. I told him that was a lot of food and carbs, he responded he would lose it at the gym.

ETA: I got an employee started on myfitnesspal pal and he loves it... He's lost 25 pounds in two month. Was around 275, now 250

You can't actually eat all you want on a keto diet. And keto works very well, especially for the very obese who need help controlling their appetite.

Anyway I've told him several times he needs to change his diet, worse thing that happened was he went to the doctor (he is a diabetic) and says he lost 6 pounds. I've mentioned myfitnesspal since I use it daily and I have no idea if he uses it. Yet he continues to ask me questions and I don't know what else to tell him since he refuses to actually use any advice I give

Tell him that, then. He doesn't follow your advice so you don't feel like your advice is actually taken and don't want to give it to someone who won't listen.

Sounds like you need to be more of a salesman if you want to get through to him. Focus on the important things and take baby steps. Do push it all on him at once or he will ignore it.

Let him know one decent line of meth a day no more no less , stay off of sodas, boudin and doughnuts. He can lose 100pounds in 3 months.
