the main group of people who do lose weight and keep it off develop an eating disorder along these lines

I'm not bulimic or anorexic. I just hate what I see in the mirror.

About a year ago I changed how I ate. I travel a $hit ton for work and find that it's very hard to eat healthy while on the road. I started May of 2015 at 6'2 and 220lbs which is pretty big for me. My face was fat and my body was fatter. Here we are almost a year later and i'm hovering around 180. I've been as low as 177 but feel comfortable under 185. I have lost all of this strictly with changing what I eat. Haven't exercised one bit except walking through airports.
I commend you for taking the first steps on changing your behavior. The most important thing that I tell myself is that i'm allowed to break the routine every once in a while. It's ok if you fall off the wagon every once in a while. As long as you enjoy the crappy food (pizza, mac/cheese, burrito...) and then return to eating healthy then you're going to be just fine.
You should always have some sort of nuts laying around to snack on. I keep a healthy supply of lightly salted almonds and cashews around to snack on when i'm feeling a little hungry.
Keep up the good work and don't get down on yourself if you slip up. Just move on and get back on the wagon.

You fricking ate the burger bun?

I already think I have diabetes. And I think that I can't do a low carb diet with that. I need the carbs because they are easy sugars.
This was a time I was the fittest in my life. Never had a six pack and wanted one.
Didn't last long.

it depends on what I'm falling off of really
in your case, it means downing a pint of vodka on your ride home from work on Friday afternoon

One of my favorite quotes regarding fitness:
"The key to my exercise program is this one simple truth: I hate my body. Do you understand the second you look in the mirror and you're happy with what you see, baby, you just lost the battle."

Selfies are good motivation.
They help you track #Gainz too.

My 2cents
Eat the way you have described on an average rest day
Add in 2 days per week of resistence strength training (wed and Saturday). On those days allow yourself carbs
You get some positive psychology in play that fosters compliance with exercise and better utilization of carbs (assuming the workout is strenuous enough). The more muscle you can add, the better you will handle the carbs moving forward (earn your carbs)
You get the best of both worlds (metabolic flexibility)
