I’ve changed headlights from bright to dim with my foot.

First vehicle we bought for our kids was a Ram 1500 truck with manual windows, manual locks, stick shift. So, yeah, both my boys have cranked up a window.

when I was a tot there were cars still being driven that had starter switches on the floorboard

Learned to drive in 55 Chevy Belaire and cranked the windows many times in hot Louisiana weather.

I have an old tractor that has that start capability but I’ve never used it, I have helped a friend “prop start” a vintage airplane before

I have hand cranked (inertia start) an old Stearman biplane. That will tire you out pretty quickly.

Best stuff there ever was. No silly arse motors to break. The first car I ever drove was a standard, no AC, triangle vent window forward of the door window, crank windows, a manual lever under the dash and glove box to open and close fresh air, points and condenser, carburetor, ran on leaded gasoline and didn't have emissions bull shite, grease fittings to lubricate bearings. When America built quality cars. Before planned obsolescence.

Yes, and a sunroof too on a 1982 Toyota Celica my buddy had back in the day.

I actually remember some early push dial phones that had a switch to generate a pulse signal like a rotary dial would, because some of the more rural interchanges were not yet set up for the pushbutton phone. It was weird when you dialed it because you would push a button and hear the same tick tick tick like you did on a rotary dial phone.

We also had a party line when I was a youngster, before I started school, if memory serves.
