They have a food trailer with kitchen they either own or make payments on. They pay for the tag. Parking permits. Business license. Health Dept permits. Fuel costs. Food. Cooking supplies. Utensils, napkins, plates, etc. Cleaning. Maintenance.
You didn't kill them. They don't think you killed them. You're not really in as much of a position to condescend as you think you are.

If they are keeping a drawer count, which they should be just for the sake of basic accounting, then they will see that the drawer will balance at the end of the day. Or it won't balance, and the truth of this story is that you stole $15 from them.

Yeah, a lot of food trucks (don't know if that's the same thing) actually tend to have really good food for a decent price because they don't have to pay the same overhead as a traditional restaurant.

I wouldn't feel bad about it either way, but if they don't then I really wouldn't feel bad. Why use that as an excuse to feel bad for them, it's their business and their responsibility. It's not like they are entering into hedge transactions. They sold you a taco and if they think they got shorted that's their fault for not keeping records.
