I think a business regardless of the size wants to know how much money they are bringing in. Keeping a register count isn't exactly the most sophisticated business practice out there. It's incredibly basic.

Good practice for any business is to leave the bills to the side of the till until the transaction is complete.

The term food truck is all encompassing for these types of street vendors I though. This is the first time I've ever heard/seen somebody say food trailer

You have to call trailers trucks even though they're not trucks because it's not just fresh cooked authentic food conveniently on the go, it's a whole trendy 'thing' now with a scene and snobby douchebags and a subreddit and everything and that's just what the hipsters call it. You thought you were just eating a taco. Naw man get with it

That looks like what you would see serving concessions at the fair. I actually wouldn't mind seeing how they have their kitchen set up in there since its so small and they're able to apparently operate like a full-fledged taco truck. Interesting.
