Dissapear the dog. Let her think it’s dead and gone. Secretly send it to an inpatient obedience program. Tell her every day you are searching for the dog. Upon completion of rehab, return the dog to her and without specifically saying so, make her understand that she is in your debt for finding the dog and extracting it from a dog fighting ring or a homeless encampment or wherever sounds good in the moment.

Honest answer. The problems you listed can be fixed through training. If you want a woman on board with a plan avoid shock treatment. Look up Zak George he just did a video on guarding, which is the biggest issue. The counters issue is actually harder to train. The treats during training are important. They have to be better than the bone or the counter food.

Been through this exaxt same scenario. My wife's dog years ago. It would bite, skittish, territorial, agressive, bad house manors, etc. It eventually got to a point where I told her to take it to be put down humanely or I'll handle it after it bit her on the leg while she was sleeping. There is zero reason to have an aggressive dog. Obviously we were far along in our relationship.
If you've only been dating for handful of months you shouldn't even begin to think of having this conversation. This right here is why you get a lab, golden retriever, any spaniel, etc. Ill be willing to bet that dog is a toy breed of sorts and she got it when she clearly wasn't ready for responsiblity of raising a dog. Training will help, see where it goes. Not sure you can retrain your girlfriends expectations of the dog though.
