The most likely truth:
She used to bone this guy and they haven’t spoken to each other since OP and gf have been together. He shot his version of a “U up?” text at 1am seeing if she would bite but the OP saw it first. Number wasn’t saved as she deleted the contact. If she really was being shady they’d been chatting on fb messenger, Instagram, or snap chat.

If a woman is attractive other men are going to try and screw her. She is at OP's home spending the night on a Friday or they live together so she clearly wants to be with him. If he starts sulking or being insecure over a random text she will move on. OP needs to trust her or else end it.

Pretty common for losers to drunk text an ex regardless of time passed esp at 1am. I wouldn’t worry it.
