In my LSU Physics class we had to be tested on Coriolis acceleration. It's somewhat complex, but we had "lab" teachers who were grad students, who held weekly problem solving classes. In the last session before the exam ours asked if we had any problems we wanted him to work. After a moment of silence he said, "I sure wish someone would ask about problem #x on page yyy. We did; he worked it; and it was on the exam. One fourth of the exam was in the bag!

How do they know? have they had someone stationed there since the beginning of time to watch? Or is it just "settled science"?

They actually don't. It depends on how you orient the earth. People mistakenly put the "northern hemisphere" on top but there really is no top in space. If you look at it upside down it spins regular.

The Coriolis is ubiquitous on earth. Anything moving on the earth will experience this force orthogonal to that object.
It's the principle behind Coriolis flow meters.
