FU can also stand for a commonly used chemo drug, fluorouracil. (I underwent six months of chemo using that drug.)

It is often expressed as defiance by the person struggling through or having beaten cancer (alternatively, folks who have lost someone to cancer will express a similarly defiant sentiment).
