Do you know anyone who lives down in the swamp and lives off the land/swamp?

One of my uncles has. He hunts fishes traps year round. Whatever season is in. He is one of 12 kids and they were raised to live off the bayou. He is the only child that made a life of it.

there's a small church on the water off I10 between NO and BR called Our Lady of Blind River. A friend and I kayaked out to it once and met the guy living next door. He lives there full time in his tiny house and goes fishing and hunting most days. He's not completely isolated or anything but it was pretty off the grid. Cool guy too, he gave us a swamp tour.

I know people who own/work on an alligator farm, I know crawfish farmers, but I'm not exactly sure what you mean "lives off the land/swamp".
