It might be the best BBQ, but I can get damn good BBQ a few miles from my house and not have to wait in a 5 hour line
This. You have to be nuts to wait more than 45 minutes for any food ever.
If yall need some good bbq, Gonzo in Luling is absolutely amazing. 20 minute wait usually.

Truth in Houston is worth the wait. So is Blood Bros

I got in line about 6, and was about 30ish back. Dudes first in line, got there about 4;30

I've never seen those retarded Franklins type waits at Truth. But agreed its solid food.

Great BBQ is. BBQ is not my favorite but when you have great BBQ, you take notice. However, I find that it also comes down to personal choice.

We rope off a section of the sidewalk and set up ladders several days in advance. People say we’re moronic retards but you want to be in the front of that line!
Yes Mardi Gras = bbq lol

Only in Austin. Those weirdos like to torture themselves before eating. Wait a year and they will have an outpost in Houston where you can walk right up to the counter.

I’ve never had a brisket home cooked or in a restaurant that came close to what I got the one time I had TX BBQ at Terry Blacks. I was hungover as hell and did not want to be there, so I was not exactly primed to love it, but the food was light years better than anything I’d ever had in Louisiana.
Can you go into detail about why this was light years better?

My bbq can be hit or miss but if I'm waiting 5 hours, it will be for mine.

I'd have to be with some awesome company to wait for brisket.

There are a lot of "followers" in this world that have to believe in everything "influencers" tell them on facebook.
Its a trend marketing hype. Is the food at these places good, yes but is it spectacularly special - no.
I have been to some of these "incredible" places that "you have to go there" (without playing into the waiting line hype) and so far not a single one of these places have impressed me as being drastically better than any other reputable establishment.
Some people just have to believe in the hype and wait in long lines to believe they are receiving something really special.

It's not a clown statement at all friend. Let me ask you this...what does it say to you that that many people will stand in line for hours just to eat some bbq? And keep doing it day after day, month after month, year after year?
What does that say to you? Can that many people be wrong? And do you think that's easy to replicate?

I'd rather Pinkerton's or the Pit Room...if you HAVE to go to Truth-wait and go for dinner on Thursday/Friday/Saturday nights.
I live in Rice Military...every time I drive down Washington going to HEB I shake my head at those fools waiting in line at Truth.

One benefit of Covid was procuring BBQ at the big joints in Austin was way easier

Do these bbq places use “influencers”? I’m not saying they don’t market and use social media themselves, but I wouldn’t think they go the influencer route.
