Remember how milk from a cow, goat, etc. initially comes out black in color but the white man puts it through a process to turn it white because we are racists?

Has more to do with the Mongolian steppe culture, whose cuisine is very much based on milk. Partially because of the ransacking by the Khanate, they viewed any food dealing with dairy to be barbaric (which was a very overused word by the Chinese; everyone who was not Chinese were barbarians).

Also, farmland is at a premium in China, grazing animals are not practical there.
