I went out to California for work and spent 3 days at Disneyland by myself and had a blast.

Should be able to do it with $800 without trouble.
If you start running low and want a good cheap lunch, the restaurant on Tom Sawyers Island (Aunt Polly's I think) used to sell peanut butter sandwiches and fried chicken. Not sure if that's still even open though.
And if you REALLY run out of money, grab a breakfast before getting to the park or heck, get you a loaf of bread and some ham.

I have tried to get the wife to agree to a long weekend trip and leave the kids at home. She won't go for it. Said she would feel bad about themy not going. Told her I wouldn't.
One thing about the food. We found that most places serve huge amounts per order. We usually split an entree. We will be doing California grill for the first time in a couple of weeks when we are in town for the Disney Cruise.

I'd love to go once without kids now that I can afford some of the nicer things there. With young kids, it only makes sense to stay in the AoA or Value resorts as they are more "fun". But I'd love to go with just the wife and get the Contemporary or Grand Floridian and take advantage of the adult offerings.

You can easily do 5 days on that budget and that includes a meal or two over $100.

Stay on property and get their dining plan. Its cheaper than off property doing meals at restaurants.

If you're staying off grounds I am going to assume you have a car. if you will have a car I highly recommend bringing in snacks to save $.
Yes, there are some park snacks you will want but bring your own apples, bananas, protein bars, PB&J, etc.

All depends on if you're doing alot of character meals, signature meals, etc or just counter services. It can be enough, but you can also drop an easy $100+ at places like Brown Derby, Cinderella's Royal Table, etc

Did that in Oct. for Food and Wine. We'd get up hit the parks, go back to the hotel around 2 pm and take a nap. Get up and walk over to the back gate of Epcot to wine and dine. We stayed at the Beach Club.

For an adult trip I also prefer the Epcot resorts. Beach Club is nice, but I don't think it's that much nicer than the Boardwalk and the Boardwalk is cheaper and more in the middle of Epcot/Hollywood Studios. Beach Club does have a much better pool area as well.

$800 for 5 days is $160 per day, or $80 per day per person or $26.67 per person per meal. If you can't survive on that, I don't know what to tell you.

Done it with and without kids. It is a different experience, without kids the pace is faster for sure. Like everyone said, that should be plenty for 5 days. If you are worried, buy your own snacks and alcohol. You did not mention where you are staying but there are plenty of Publix with in a short drive or uber ride of all the resorts. I would recommend breakfast in the room, even if it is purchased at a convenience store on property. You will get more out of your day if you are there for rope drop.

Also if they plan on drinking alcohol as well.. hell I bet spent 400 bucks on drinks alone on my last visit
