First of all they have Shake Shacks in Chicago and Vegas among other places.
I have eaten at The Modern. It is a very high end place with impeccable service. Interesting.

This is nothing more than feel good BS. This experiment of theirs will fail. And when it does, don't expect them to lower the prices to pre-experiment levels. And you better believe that they will still accept tips. It will be like, "You don't have to tip, but you can if you want to...wink, wink."
This non tipping stuff will only work for higher end, non comparable restaurants. If you have a competitor across town that offers the same stuff as you, but they don't do the no tipping thing, that restaurant will kick your arse. And their waitstaff will be making more money.

I think they'll have just the same incentive.
99% of the work force in the US doesn't work on tips, and I don't see rampant complacency (other than government workers) in any field I work with.

Based on his interview on npr it's more about getting the backhouse on track, waitresses tips have grown but they aren't typically shared by the cooks, etc. Now they'll be square. Interesting to see how it goes, it'll likely destroy the restaurant industry like the min wage hike in Seattle.

I can't say that I know a lot of restaurant workers, but a childhood friend of mine is a waitress at a really nice restaurant. She makes a much better living than most people realize. I'm sure she doesn't want this kind of thing to catch on everywhere... But the cookers, bussers, hostesses, etc. probably do.

Being a waiter there is seen as a profession. It is going to be interesting to see if this concept makes waves here.

In my experience, dining out in Europe is more often the main event of the evening... Much less rushed than here in the States. Being a waiter is definitely a more respected profession there than it is here as well. That said, I've almost always had positive experiences here and abroad when at nicer restaurants with professional wait staffs.

European service is slow as frick. Partly cultural differences but the lack of tipping does have an impact.
