He told me when you dry it and it turns to 1 lb (or whatever weight) it is pumped with stuff in the jerky and not the case with the dried beef. Not sure how true it is but he says 1lb of his stuff is way more meat than 1lb of beef jerky.
I'm sure you can google it to get a way better answer.
The taste is way better on the dried beef. Super juicy. Like insanely juicy, the juiciest beef jerky you can imagine. You suck on the juices for like 5 minutes and then you start chewing.
The guy used to work with me and he just quit one day, never saw him again. I am still kicking myself for not getting his contact info.
I'm sure you can google it to get a way better answer.

Gotcha. I get that extra juicy factor when I make it at home, so maybe something to that.
I like making two batches and pulling one when they are still a little juicy and leaving the other to dry out more. I like both types depending on mood. Nice to be able to control that.

I mean, I do make my own jerky sometimes and it’s ok but not great. I have had really good beef jerky and I would order that shite by the truck if I can.

But it always comes out better and cheaper than store bought if you know how to do it. Especially if you killed it yourself.

I've made a lot of my own - have an Excalibur dehydrator that will make about 6 lbs of jerky in about 8 hours. I used to find eye of round on sale that I'd use, but haven't seen any for a while.

Yeah jerky is thru the roof right now. I enjoyed an occasional every month but after seeing the prices lately that fix is over
