Saturated fats like tallow are more stable and can be stored for long periods. I buy 100% grassfed/finished tallow in gallon buckets online

Years ago when I learned about energy breakdown and cholesterol in biology and biochem, I recognized instantly the accepted narrative about high cholesterol and saturated fats smelled like shite

You're calling me educated? That's the nicest thing anyone's ever called me on this site.
I don't keep vegetable oil in my house, and eat an overall very healthy diet. I track my macros (most days, some days I slack) and the vast majority of the time don't consume processed foods or cokes.

It's not really about the chemicals and additives though. Even if you bought cold pressed soybean oil without chemical extraction or additives, it'd still be unhealthy for you because polyunsaturated fatty acids are unstable and prone to oxidation.
Olive oil is primarily monounsaturated fat though which is universally accepted as good for you by all sides of the nutritional debate.

Everything in this video is 100% true and I’ve known this for about 5 years now. We are straight up lied to about the way what we eat effects our bodies. How we have been treating diabetes is completely backwards, and it is criminal that we continue to do it the same way now that we know how to put it into remission. I cured my alcoholic fatty liver disease (which helps my alcoholic cirrhosis, which is more permanent) by changing to a strict keto diet and my gastroenterologist still doesn’t seem to get why my liver/tests look so great hahaha.

Who was telling us to eat a bunch of vegetable oil? Maybe the companies who sell it, not scientists.
But if food scientists knew a damn thing we would already know how to control fat storage and thus fatness in some easy way. I mean really easy, not the way eat less and move around more plan that also works.

Now I don’t feel like an idiot for only using butter when cooking anything in a skillet. I’m still a fatty tho I guess

Low density cholesterol stores fat, high density cholesterol takes fat to be used for energy. Cholesterol is just a way for your body to transport fat

We do. We know that triggering the metabolic state known as ketosis rapidly burns off fat, but eating in a pattern that induces ketosis gets mixed up with all of the fad diets just like all of the good nutritional advice does.
