Yes. You should get the police involved. You need to crate a paper trail to prove that the problem is her and not you. I would also install a video camera system and hide a game camera to take stills of her on your property. She is obviously mentally ill and you cannot predict how this may escalate.

As for the fence issues? frick her. She is out of her mind to think that you should make a fence to block off the little bit of land she left outside her new fence.
This would be like me getting mad that there is about two feet of my property between my house and my neighbors driveway. Its not his job to block off access to land I knowingly leave open.

I most certainly have cameras installed. It's just a matter of time before this woman does something really insane. I'd also record every single interaction with her.

Tell her she has to mow her 1' without coming on your property. If she does, tell her you'll have her arrested for trespassing.
I believe after a certain number of years, the fence becomes the property line and you will own the land. Google "adverse possession"

When I planted my Red Maples, I planted them well within my yard so as not to inconvenience my neighbors...either from branches or potentially falling over. Seems kind of a dick move to do otherwise. But, you didn't...so I'm just venting! haha

put up a fence on your side 10 feet high. only just put the fence part 8-10 feet of it. Electric fence!

Yeah, of all the things in the OP the only thing where I had sympathy for the crazy neighbor was the tree trimming. Big trees littering and obstructing parts of your lawn is not very neighborly either.
All of her other behavior deserves criticism from what the OP represents. The idea of a Youtube channel with her screaming nonsense does appeal. You could spice it up by telling her jokes or asking her idiotic questions.
