Of your options, I’d go with the DJ, but not the fluted bezel - just a bit too dressy.
You may also consider a Panerai Luminor. It’s a very versatile watch depending what strap you put on it.
I also agree with the Grand Seiko... fantastic watch.

Frankly, if you've never dropped big money on a watch, I would not get a mechanical watch as a first buy.
I love Omega, but Rolex is going to be a better long term purchase, just because they hold value really well.
But, there are so many nice watches (yes, quartz based, which are nearly perfect timekeepers) in the market now for a mere 2 to 5 hundred, rather than thousands.
And then you have a "beater" and decide if you really want to go all in for a mechanical that will require more care, more maintenance, more "angst" about losing or damaging the thing.
Just my 2 cents and probably not worth that.

Be very, very careful there...lots of opportunity for missteps, especially if you are not very well versed in the watch world. Number one stop I would recommend if you are going secondary market would be buy/sell section at rolexforums.com or watchuseek.com. You have to be very careful going this route.
If you happen to be traveling, you might be able to get that date just from an authorized dealer and avoid the sales tax (some dealers will still ship back home if you buy in person) or if you are lucky enough to be shopping in a no sales tax state.
That is not an allocation piece (the SS Date Just), so typically a dealer can order that and have it in 4-6 weeks even if they don't have it in their case. Fortunately for you that particular one is not affected by current Rolex SS sports model hysteria and resultant "scarcity" and price bloating.

Forget what I said about Seiko.
What I was suggesting was to get something exemplified by the Citizen Eco (or something in that market segment).

I think a sub or a datejust are very good choices. They're reliable heirloom pieces that will hold value and have traditional styling that will age well. I wouldn't do a blue face for any first watch, though.

Seiko 5’s also come in mechanical. I gave one to my son for his first mechanical beater watch when he was in high school.

I help administer a Rolex watch group (even though my only Rolex is an early one without a lot of value because parts are very difficult to find and finding someone to work on it is even more difficult).
There are tons of pretentious posts (the "watch roll" or "wrist roll" videos where the poster rolls the watch into view, pictures of Rolex with exotic cars and women, etc.). No one really complains because almost everyone is pretentious so no one gets offended LOL.
Every once in a while, someone will slide in a "watch roll" with a Casio or Timex. I think it is funny, and most of the members take it in good humor.
This would not show up there:

Based on the group I admin, the Rolex "Pepsi" is very popular (yes, "Pepsi" is the nickname for the watch).

OP I would suggest starting with something like a Tudor Black Bay 58 (or a 36, the 58 has an in-house movement though).
If you’re sold on going up to Rolex tier, I would probably pull the trigger on a Grand Seiko over a Rolex Datejust. If you go Rolex I would look for a stainless Sub or GMT over a Datejust.
ETA- OP check out Grand Seiko-SBGJ201 over a Datejust, unless you’re just sold on the Rolex clout (not saying they are bad watches by any means, but some people just want a Rolex so that they are noticed by others).
