IIRC LA Tech had a lineman a few years ago who was about 6-11. He wasn't that heavy though.

I imagine it would be easy to get under his pads and to get leverage on him for a more stout player.

The problem with being a tall guy like that - it would be almost impossible for him to get leverage. He would be relying solely on his mass, strength and limb length for any sort of advantage. Ed Jones was called "too tall" at 6'9" (but he was exceptional).
If he's a defender, he'd be the easiest guy in the world to cut. If he's got quick feet, he might make an impressive OT just because of the challenge of getting around/through him. But, if he's not mobile, that's the same as hauling a chunk of concrete out there to fill one of your 11 spots - fairly easy to gameplan around.

I disagree. Ethan Pocic, LSU center, is 6'7" tall, and weighs 309 lbs. Unheard of, because centers are usually covered by a NG in certain sets, so centers are normally known to be short and stocky. But Pocic is thriving at center. It's difficult, but impossible?

Of course there are exceptions, but there is a reason that the largest guys you hear of are around 6'6" and 6'7", though - there are limits to everything. At a certain point, a mobile 7 footer, playing at 375 or whatever is going to play OL somewhere. But not this kid. Sadly, right now he gets attention solely because of his size. He already recognizes he is too big and trying to lose weight.
And Pocic has to work harder for leverage than a 6'4" center or a 6'2" center would - and that difficulty goes up with additional inches of height above "optimal".
Height doesn't really hurt an OT nearly as much as a OG or C - as they're using lateral movement, hands, hips, etc. OGs and Cs have more plays where they have to block with the entire body and that almost requires lower pad level against a player of similar size and strength.
