Is Atkinson really not in play for either OKC or Houston? If not the question becomes would it be better to pair a young assistant with Atkinson for a year before he leaves, or SVG with a young assistant that's probably in place for multiple years and easier to replace if the assistant leaves.

Atkinson is still in play for both of these teams. It's possible he is waiting for us before he takes the Houston or OKC job if offered. I know he had an interview with HOU recently.
Also forgot to add Ham to the list.

Griffin hired Langdon, a main competitor for his own job. He's always said he wants "the best people".
So it would make sense to pair a HC and one of the other candidates for the job as lead assistant, or at last an attempt by him to do so.

Absolutely, Griffin has said from the beginning he wants to hire as many high quality people as possible and figure out the roles later. I'm still not sure what Swin Cash's job is, but she's got a fancy title and she's pretty visible both to the public and the team.
