Where did the tradition come from way back? Blues that used guitar extensively?

We all expect them to be there, but why?

Insofar as rock and roll has 2 primary lead instruments - the piano and the guitar (if you don't treat vocals as a separate category, then vocals is the third "lead" instrument), the tradition of instrumental solo is probably as old as the instrument itself and would certainly seem to at least pre-date Jazz (1920s) and probably the middle of the 19th Century.

(ETA: I suppose the shorter and more concise answer is in your question - it's tradition - it's expected. That's why.)

I'm just trying to find the bridge.
Has anybody seen the bridge?

Blues.

It let the song speak through itself through melody between verses.

Because slow motion and fake rain, that’s why.

That late 90’s/early 2000’s period of rock when nu-metal took over was a dark time for guitar solos (and music in general really).

It gives the vocalist time to catch his breath.

Agreed. You can look at bluegrass (and before that mountain music) and they have breaks (solos) for the various instruments. Some songs have a break for each instrument in the band, others have just one or two breaks for specific instruments (fiddle, banjo, dobro, mandolin, etc.)

That no solo period of the 2000's was awful. I can understand on some songs, but everyone went draconian with it. I remember hearing a song that was good, but would have been one of the better songs I had heard in a long time if it would have had a tasty solo in it. The song was just begging for it.

Rock n roll evolved out of blues (which had guitar solos) and hard bop jazz (which traditionally traded solos between the piano and horns). If a rock band doesn’t have a piano or horns, the guitar should naturally solo.
