For me, it's Oasis. Great hooks and riffs, great songwriting, cocky and entertaining frontman, and great style.
To round out my top five:
2. Led Zepplin
3. U2
4. Muse
5. The Who

If the essence of Rock n Roll is, "sex, drugs, and RnR" then its rolling stones. Don't think anyone got more arse than Jagger, no one did more drugs than Richards and they toured for 50 years.

Bon Jovi
The Beatles
Incubus
Hootie (Debut years)
Motley Crue
For me, Rock is all about having fun, and not giving a shite.

Guns N Roses; Appetite is the definitive rock album, IMO

The Stones were a lot more prolific and generally better song writers but the Who have always been my favorite rock band. John Entwistle on bass and Keith Moon on drums is about as good as it gets. Townshend was a damn good guitarist and I've always liked Roger Daltrey's vocals. At their peak I don't think there was a better ROCK band than the Who (more so as a concert band than a recording band).

Stones.
But I will also argue for Van Halen.
A dynamic lead singer
A guitar virtuoso
A rhythm section that is solid with both rhythm and harmonies.

I don't understand groups like this and Oasis, U2, etc, being called the definitive rock band. It's not that they're are bad, but are they really even rock, let alone the essence of it? I mean I know they are technically rock, but the Black Keys are more of a hipster festival band than a straight ahead, testosterone and alcohol fueled classic LA/London Rock band.

The Black Keys were a blues rock band early on which brings up some links to Zeppelin/Stones. They were awesome during those first 4 albums or so. Recently they've gone mainstream and sort of dropped the blues and began adding sounds to become more radio friendly or something. It still sounds good, but I think these rock praises are being based on their early stuff.
