Over the years, Boston's eponymous album has become that for me - I didn't always care for Smokin', but now it is definitely a "don't skip", although still not my favorite.
Tool tends to have deliberate non-music or non-standard tracks that I admit that, as a fan, I sometimes skip. Their Undertow album(other than the blank 1-second tracks so the final track count is a juvenile, but funny 69) doesn't really have such tracks.
The Beatles Abbey Road is probably in this category. I know the "cool kids" don't care for The Eagles, but Hotel California is a fantastic album, start to finish.

I think you're right, but I never need to hear "Money" again as long as I live, so not on my list.
