Thunder Island by Jay Ferguson is one of my favorites that are underrated.

Ace - How Long
A young Paul Carrack on vocals.
Atlanta Rhythm Section - Spooky
Barry Bailey's lead guitar tone with his 50's Les Paul Goldtop is incredible.
Al Stewart - Year of the Cat
Steely Dan - Home At Last

I like Matthew Sweet’s cover of Magnet & Steel, too.

Cheesy greatness.
Jay Ferguson - Thunder Island
He was an alumnus of Spirit. I'm not really sure I know what "Yacht Rock" is. I'd assume it's "soft rock" or "mellow gold" but, judging by some of the submissions here, I'm really not sure. Does this count?
Spirit - Nature's Way
Spirit bass player Mark Andes went on to join Firefall. Surely this qualifies.

Level 42's "Something About You" and the Johnny Hates Jazz tune "Shattered Dreams" are examples of 1980s-era soft rock perfection.
