I also like any bluegrass or zydeco.
A sleeper album- "O Cracker where Art Thou", it's Leftover Salmon recording all of Cracker's greatest hits in bluegrass style with David Lowery (singer of Cracker). It's great.

If I am laying back and wanting to just listen and relax, I'll put on Animals by Pink Floyd. Sooooo good. I was listening in my house one day last week and my neighbor threw a brick through my window. He said he wanted to be able to hear the music better.
