Joni Mitchell - Blue
Sarah MacLachlan - Surfacing
Norah Jones - Come Away With Me
Cat Power - The Greatest
Regina Spektor - Begin to Hope
I know this is weighted to more recent but still most of the best...but I'd have to put...out of these singers and their signature albums...

The gold standard for such albums is Tapestry by Carole King. That included the #1 hits "It's Too Late" and "So Far Away", "I Feel The Earth Move", "You've Got A Friend", "Smackwater Jack" and her version of the ever popular "Will You Love Me Tomorrow".
It came out WAY BACK in 1971, and ranks as one of the best selling albums ever.

Of course, I'm assuming you know that Carole King did write this song (with Gerry Goffin)

Any list that doesn't mention Carole King's Tapestry or any Joan Baez album is suspect, but I do appreciate the Joni Mitchell representation.

And if you're going to throw out Taylor Swift, then I'll mention Vanessa Carlton. Most of her songs are pretty sappy but she does have a good voice and isn't shabby on the piano.

I now and have always wanted Natalie Merchant to sing me to sleep. Not even in a sexual way. Although mid 10000 Maniacs peak she was pretty good.
I just want her in a comfy (she's getting older) chair at the corner of my bed. Just singing. Her voice has so many layers.
