Famous musicians with obscure side projects

You can define "obscure" however you want, but I see it at as a band or music project that few people know about, with a small amount of streaming service followers
Dean DeLeo, lead guitarist of Stone Temple Pilots, has a band called "One More Satellite". They have 17,000 followers on Spotify.
They are decent.

I don't know if it counts as obscure because it actually charted well but Steven Tyler did a country album which I thought was odd

Not if they country it up. I've seen the Knitters a few times and it's a totally different show than X
