Don't know if I can call it better, but compare Donovan's trippy original version of 'The Fat Angel' to the live version by Jefferson Airplane from the 'Bless It's Pointed Little Head' album. The Airplane's version uses a drone effect compared to Donovan's use of sitar.

I won't just say that they're better than the originals, but Strawberry Girls have a few really good covers of pop and rap songs with the talent of an exceptional math rock band.
Swimming Pools (Kendrick Lamar cover)
Starboy (The Weeknd cover)
And just for shits:
Call Me Maybe (Carly Rae Jepson cover)

Stapelton's version is one of my favorite songs ever. I can listen to it over and over.
If you like Stapleton's version, you should love this. This is the song he essentially put the lyrics of Tennessee Whiskey to.

Anything Foxes and Fossils covers.
The girls are all grown up now.
Their cover of Suite Judy Blues Eye was their first song at their first gig.
Their cover of Harvest Moon is one of my favorites.
