Because she was just as self-centered as everyone else was.
It's very easy to flip the script and see this. Her lack of ability to mention it/not care is just as bad if not worse than everyone else's lack of concern for her birthday.
The movie should be a case study on typical American woman behavior. Hell, now that I think about it. Maybe that was the point in writing the movie. She is coming of age and just beginning to exhibit the typical personality of a psychotic American woman.

Actually I think Sam not mentioning her birthday was mainly due to the conversation the night before with her sister... I think she was trying not to be that girl and ruin her sister's wedding.

It wasn't stolen...Jake let Farmer Ted borrow his dad's Rolls Royce to take Caroline home, and the two of them ended up fricking in the parking lot.
Also, something I noticed before, but didn't click until last night. Everything in the movie basically stems from Jake knowing that Sam wants him to frick her. So all of the talk about her being nuts over him and all that, and him wanting to get to know her and ask about her and shite...it all boils down to him seeing that note that she dropped in class saying that she was a virgin and wanted him to deflower her. So all the girls that ever painted Jake as some dreamy perfect dude were basically completely wrong.

Because your family forgetting your birthday is the ultimate unforgivable act that can be held over your parents' heads for the remainder of your pre-adult years. It will trump any of your friends' "My parents are so mean" stories.
It's also validation for her teen angst. "I'm not just imagining this... I have proof that my family doesn't love me."

Question which has been asked by many people over the years:
Wouldn't they notice when they picked the date for the wedding that it was the day after Sam's birthday, and therefore her birthday would be less likely to be forgotten?
