I'll go with Zahn's trilogy and Thrawn.
The first book of that trilogy is the only EU thing I've ever read, so I'll go with that. The principles are too old for it though.

The Revan story has been done and won't be going to the big screen. I love Darth Bane too but he was way before the timeline they will do

The KOTOR story would have been better than the original Star Wars movies, IMO.

I love the KOTOR story and one of my favorite games ever but could they really make it any better than it already is? i think it's one of those things better not touching again.

Yeah I agree for the most part, it would have been sweet if that story ended up in a screenwriter's hands instead of a game writer's though.

Yuuzhan Vong War
Be honest. If you read all the books, theres no way they could condense that into three movies. No way.

The Dragon will occasionally commit a Heel-Face Turn when confronted by the heroes. If he does so, chances are very good that he will end up killing the Big Bad when the heroes cannot bring themselves to do so; often by joining the villain in death as a final act of redemption. If, instead, his Heel-Face Turn comes earlier in the series, he may redeem himself and join The Team.
this almost put me in a nerd coma

No Dark Jedi. Its been done, and its boring.
Yuuzhan Vong, though I think this would not translate well to the big screen. And the dumb masses probably wouldn't respond well to it, "Wait where's Darth Vader and Jedi and stuff. I THOUGHT THIS WAS A STAR WARS MOVIE!?!?!?!" as they stuff their fat American faces with more popcorn.
Thrawn Trilogy. This would be my favorite choice. It would harken back to the original trilogy where the real conflict was Rebels vs. Empire. Except now the tables have turned, and the Empire's remnant are now the rebels. Not some Jedi-centric shite show like the prequels were.
