What's stronger, Wolverine's Adamanium or CA's Shield?

No. Wolverine's claws are adamantium, Cap's shield is vibranium.

Captain America's shield is a unique vibranium alloy. Attempts to recreate it led to the invention of adamantium. Caps's shield is stronger than mere adamantium or vibranium..

I know you're right about the shield being made of a vibranium alloy and why but I don't recall ever seeing anything about it being stronger than Wolverines adamantium. Nothing is.

Wolverine can't cut through Caps shield but Cap couldn't use the shield to break the claws, his bones or anything adamanium like that.
Comic writers just made it where they basically cancel each other out.

Adamantium can't be physically damaged. Vibranium has been destroyed multiple times as Cap's shield.
That said, Vibranium is a much cooler and useable material.

In Captain America 303, Dr Myron Maclain, the inventor of both, said that while adamantium came close, it still was not as strong as the unknown alloy that makes up Cap's shield .
The alloy unknown because he fell asleep while making it.
Here is a breakdown from the Marvel database.

This is much easier to work with, making it much more cost effective though at the expense of its strength. Someone with superhuman strength (say the Hulk) can break it or warp it. Also referred to as Adamantium Steel. Any and all forms of Adamantium to have ever been broken or manipulated have been revealed (through retcon) to be Secondary Adamantium.
Beta Adamantium
Wolverine's skeleton was originally reinforced with true Adamantium. His mutant Healing Factor not only allowed him to survive the process, but it also induced a molecular change in the metal. Beta Adamantium functions like True Adamantium but does not inhibit the biological processes of bone. This fact only became apparent after Magneto forcibly extracted the Adamantium from Wolverine's skeleton.

He's a smart one. We watched CA: Winter Soldier tonight and as soon as he started reflecting bullets my son asked the question.
He also has the Marvel Lego games which has increased his knowledge of the universe.
He knew who Star Lord was before I did due to this.
