Die Hard is in no way a Christmas film. That has been proven. Once again, motifs and themes are not the same.
Now, the idea behind Groundhog Day the film is quite different. Bill continues to wake up each day and holds on to his past (behaviors, attitude, regret, hate, anger, disgust...whatever). This is symbolic of Bill coming out of his hole, seeing his shadow, and retreating again. When he finally lets go of these things and decides to change, his shadow is gone....and Spring (love) is on its way...
So Groundhog Day is much more than a simple setting or a reoccurring motif. It is a central idea/major theme of the film.
Die Hard's involvement with Christmas means nothing really. The entire idea is that Bruce wants to reconcile with his ex-wife. She happens to be at a Christmas office party (on Dec 24, nonetheless! Who does that!!!???) That party could have been for any holiday or birthday or office milestone. Terrorists attack; Bruce kicks butt. Sorry, Christmas really has nothing to do with Die Hard's central idea/main theme(s), settings importance, or character development.

Other than it taking place on Groundhog Day, the actual "idea/theme" of GD isn't really relevant to the plot of the movie at all.

Except it was absolutely critical for the plot. The entire terrorist attack depended on it being Christmas. Bruce wanted to reconcile with his ex-wife so his family could be finally together for the holidays. One of the biggest themes in Christmas movies is family, traditions, giving, and togetherness. All of this is emphasized in "Die Hard". The entire movie was about the lengths one man would go through to re-unite his family for Christmas. If that's not a Christmas movie, than neither is "Christmas Vacation" or damn near any Lifetime or Hallmark Christmas movie that doesn't involve Santa Clause or magical elves.

Actually it couldn't happen on any other holiday and be the same. The point was that the groundhog's prediction of there being more winter was thought to be tied to there being a continuation of days. There was actually a plot point when Phil kidnaps the groundhog and and drives them over the cliff.
What other holidays have groundhogs predicting the future?
