There's enough material in Starcraft to cover 7-8 seasons.
1 - Beginning and Terrain Campaign. Ends with the reveal of Kerrigan bursting from the Chrysalis.
2 - Zerg Campaign
3 - Protoss campaign ending with the evacuation of Aiur to Shakuras
4 - Brood War Protoss and UED campaigns
5 - Brood War Zerg Campaign and 4-year interlude
6 - Wings of Liberty
7 - Heart of the Swarm
8 - Legacy of the Void/Into the Void

This is easy for me:
1. Any of the great Mech Warrior games. This franchise is gold but dead. Great history, interesting stories and Mechs are cool.
2. The Baldur's Gate Saga from the PC. D&D not done in a cheesy way. Cool story arch and great enemies and allies. Best for this one as a series or a Trilogy of movies.

StarCraft (the original) always seemed like it would be an absolutely awesome new sci cinnematic universe. It was heavily inspired by many films, like Alien/Aliens, Starship Troopers, etc.

Any of the more politically driven final fantasies would make great TV series if done right. 12 and 10 would be my first two choices.

I think Final Fantasy Tactics could also make an interesting series. At the very least I want to see live-action knights riding what amount to giant chickens.

A Mass Effect series where they changed the ending would be one of the few times I'd be thrilled that they departed from the source material radically.
Hell, I could live with Shepard realizing that the Reapers are just feeling cock blocked and taking them to an Asari whore house compared to what we actually got.
