She does have the british accent like Kenobi. Grandchild? It's a stretch, especially since it'd be pretty out of character to just now reveal that Kenobi broke the Order's ban on taking a wife/attachment.
It was pretty out of place that Rey was able to instantly figure out the Jedi mind trick concept, even though no one ever even suggested that this was a skill she could master.
Even Luke didn't have any idea bout them until after OB1 demonstrated it in Star Wars.

I don't think Luke will take the lightsaber from Rey
That's hers and he'll either get his Green one back or create a new one

That's a good point. Maz made it clear the lightsaber was hers now. Wouldn't make sense for Luke to take it when it's no longer his.

Until they fill in the story more, it's simply a plot hole. No fan theory changes that

I think this scene was intended to be more of a symbolic parallelism more than anything, and therefore somewhat revelatory.
Earlier in the film, we see Kylo offer up his lightsaber to his father. At the end of the film, we see Rey offer her lightsaber to her father.

I can definitely see how most people liked TFA so much. I think the gritty dogfights and the fact that all of the movie takes place far from galactic society is what most people felt Star Wars is.
But,I've read like 50 Star Wars novels, so for me all 7 movies together is just a very small part of what SW is

No shite. But how about some counter arguments and not just repeated instances of "well isn't THAT convenient." And "that's not how the force works! But muh training!"

Loved it.... Only thing I didn't like was gollem as the emperor like character... Everything looked and felt so good that it just seemed out of place to me.... Would have rather had an old man or something. That's a ridiculously small complaint. Saw it in iMax 3D and it was a stunning experience.

Empire is in my Top 5 movies ever, while Star Wars may make the Top 50. This movie I think was better. To me it's like comparing Naussicaa and the Valley of the Wind with Princess Mononoke. Both of them are excellent and tell the same story, but Mononoke just does these things better.

Some points on why Rey might have been able to use the force so quickly.
Han, early on, tells Rey and Finn about the force(paraphrased) "I didn't believe in any of it either, but it's true, it's all true."
They probably grew up hearing the stories of Luke and all stuff he did. So now she knows that stuff is real. Believing is a big step in using the force.
Then, she gets drawn to Luke and Vader's saber, giving her visions of the past and maybe the future. That gives us (and maybe her) a hint that she's sensitive to the force.
Later, Kylo Ren tries to read her mind. She naturally tries to resist and after a few seconds notices that not only is she resisting, but can read his mind too and puts him on blast about wanting to be like Vader possibly making him shite himself.
After that, it's not a stretch on the mind trick with the guard who likely knows nothing but how to fire a blaster and take orders. It took her two tries for it to even work.
After that, pulling the saber probably felt almost natural for her. The fight with Kylo Ren is explainable as she's been shown to be good at using a staff. (I'm calling it now, she'll use a double-bladed saber when she builds it)

This movie sucked, and you're trying to rationalize it not sucking. Disney is just a bunch of bean counters, and that is all they will ever be. Originality is beyond their capability. But hey. Money. Superficiality. Rationalization. Etc. Etc. Etc.
