From what I've read, this is going to be horribly disappointing.
People keep saying "Rian left JJ nothing to close with"... not exactly true.
You could have created a flashback, in which we see a complete ripoff from LOTR--
Snoke as Saruman, fricking around with Sith holocrons. He gets locked in when touching it (as Saruman did when touching the Palantir), and you get Palpatine as Sauron:
Build me an army worthy of Mordor
Only, instead of Mordor, it'a an army worthy of the Sith/Empire etc... the First Order.
So then end the flashback, cut back to current events; Snoke is gone, just like Saruman was. But Palpatine/Sauron is still there in spirit, and reviving/coalescing into tangible form again (as Sauron did).
And re Luke- find him alive on Tatooine, and let him say he just Force-travelled or something like that, instead of dying. The preeminent Jedi master might have learned to do that somewhere along the way.
After that, just take the movie where you planned (if you had a plan) after TFA. Rip off ROTK, who cares.
Heck, they could have taken a page from Stargate SG-1; have Luke and Palpatine basically Ascend into higher spiritual beings, gods of a sort. Palpatine does this first and threatens the Galaxy, Luke then ascends and stops him by locking into enternal conflict (neither can defeat the other, but Luke can keep him occupied while mortals go on about their lives).

George Lucas said the Emperor was "absolutely dead" after ROTJ.

Wrong. Star wars is not marvel. This is the entire problem with Disney owning star wars and making movies in the age of marvel dominance.
Star wars should be nothing like marvel. If Disney continues down the stars wars is just marvel but different path, they will kill the franchise.
Disney wants that easy formula to success, but it wont work for star wars and even the marvel formula will get stale.
