I love Mad Men it hooked me with first episode. I can see how some would say slow.
Ad agency yes. But really seems to tell the story of what life was like then. Main character with big secret. But that is not really a spoiler it is established quickly.
I would love to hear from someone old enough to recall the time period just to see how accurate it is. I keep trying to get my folks to watch. I was born in 1973. The writing and quality of filming and editing and music is really like watching a well made movie every week.

Depends.
Mad Men is a character driven show. Slow at times but the best tv show of the three listed.
If you want an action packed, popcorn type show then SOA and TWD are excellent for that. TWD is the better of those two.
A little about each show.
Mad men is based on an ad agency and the big wigs that work there. set in NYC. I think it began set in the 50 but they are getting to the 70s now. It basically just follows the characters lives and their struggles. Lots of character development.
SOA is based on Hamlett. It is about a motorcycle gang with a lot of history. They run guns and do other illegal things. The main character Jax is the VP and the President is the man that may or may not have been involved in killing his father. The president is also married to jax's mom. If you watched the shield and enjoyed it, you'll enjoy this one. Sutter is the guy running SOA and he was a big part of the shield.
The walking dead....basically a survival show. But not just surviving zombies. It was initially, but now the bigger threat is other fellow survivors and the zombies are honestly the secondary threat.
Not sure if you watched Breaking Bad, but I think that is on netflix and superior to the shows you've listed. house of cards is also outstanding and a quick watch as they've only had one season.

The premise is interesting, but the dialogue is repetitive, and the stories lines are just too drawn out for my liking. I really cringe when they have Jax reading or writing in his journal. It tries to be deep, but it just sounds like someone's facebook post.

It amazes me the amount of people who don't get The Walking Dead. So many "fans" bash the fact that the show isn't all action all the time...if there isn't 50 zombie kills the episode was slow or boring...the show suffers because a certain percentage of its fans watch the show expecting a horror movie and it has more to do with human nature than zombies.
I think it is a great show, well made with excellent imagery/story lines/character development and several holy shite moments that catch you totally off-guard.
Mad men is great. Great juxtaposition between our beliefs of today and our actions in the sixties. Great character development and story lines. Great acting. Well worth watching.

You shouldn't need selling.

Never seen Mad Men or Walking Dead, but SOA is one of my favorites. Really addicting.

Mad Men is a comedy about a rest home in the 60's.
The Walking Dead is a drama about a family owned Mortuary.
Sons Of Anarchy is about a shipwreck survivors devolution into Anarchy, then their attempt to restore some form of feudal system on the island.

I love SoA. This is one of the best seasons by far. They have had some lack luster seasons (one maybe two) but for the most part its addicting
