While there are some strange entries on your list (Pauly Shore??? BTW Hoffman and Wilder are actors, not comedians. I will say it's nice someone here has even heard of Mort Sahl), your basic point is quite obvious.
The Jewish migration to America around the turn of the last century coincided with the ever-increasing urbanization of the country. These two events would revolutionize American humor, altering it from the cracker barrel style (Will Rogers, Andy Griffith) to the new urban and mostly Jewish style: faster paced and a lot more cynical.

Almost all Jews are atheists. It is a cultural identification more than a religious one for most I grew up with.
