Regenerate body parts. What happens to them? Also what if an immortals is eaten.

I think Marvel went as far as to have Wolverine regenerate from a drop of blood or something.
I prefer the Highlander "lose your head - game over" rule.

Depends on the definition of immortal. Elves from Tolkien were considered immortal but it just meant age or disease couldn't kill them. Extreme trauma can.
The Anne Rice version of immortality is never die. It was mentioned in The Mummy that some cows were chopped up and dropped in the Nile after receiving the immortality potion. 1000 years later, those bits and pieces are still alive at the bottom of the Nile.
Immortality also doesn't mean indestructible as seen in that Bruce Willis, Hawn, Streep movie where they were undying but could be permanently damaged beyond repair.
So the answer to your question is there are numerous variants of immortality but it is a bitch unless coupled with being indestructible.

More importantly, what if you were immortal but committed a crime that got you life in prison? Would you just spend decades/centuries in jail until the government sprung you to run tests on you when they saw you weren't dying or something?

Commonly its the largest part left there is not rhyme or reason behind it. For example The Hulk was disintegrated to a single cell and regenerated from that.

I said in The Mummy. Vampires can die but the Ramses Immortality potion in 100% undying. They made a point several times to mention the chopped up cow bits still living at the bottom of the Nile.

Lots of comic based replies. But, if you believe, there is an immortal amongst us. The soldier that stabbed Jesus on the cross was damned to walk the Earth until the end of time. So he is out there. I'm guessing he just regenerates instantly or re-constitutes instantaneously. Or maybe he just resets (ala Groundhog Day)..

Look up the history of Saint Longinus, a few movies were based around his story/legend. The soldier that stabbed Jesus was blind and healed by the blood, then was made immortal. Something like that. Lots of different versions and tales. Its one of the oldest tales of an immortal (like Cain). He regenerates if he was killed though and could not die, God's will and all..

The person that eats the immortal, get a splitting headache. Eventually his son will have to split his head open so the immortal can emerge. At least that's what I learned in Greek mythology.
