I think Saving Private Ryan would definitely be one of the best movies for a surround sound system.

Heat
Top Gun
Those are the only ones I can think of off the top of my head, aside from the ones you mentioned.

I've always found the DTS mix/sound to be better than Dolby Digital Surround. But don't limit yourself to just movies, some music DVDs/Blu-Ray discs have fantastic surround mixes (notably Pink Floyd's Dark Side of the Moon, the Eagles's Hotel California in DVDA.
The opening scene of Saving Private Ryan, definitely!! GREAT mix.
Pearl Harbor, when the germans attacked. Loved hearing the machine guns going off in front and and the bullets hitting behind and to the side.
Not a movie, but The Eagle's Hell Freezes Over has an EXCELLENT DTS surround mix.
The Matrix
Gladiator
Look on AVS forums. They usually have ratings on great surround mixes in movies. But I feel your pain...most people with surround systems don't know to set the DTS or Dolby Digital for discrete surround and think an overactive subwoofer and sound coming from all the speakers is all there is to "surround sound." A big problem can also be how the speakers are placed, and it takes some planning to not have the "sweet spot" limited to a small area in a tight center of a room.

I work in audio video sales and the movie I've found that works great is the first fast and furious. The opening scene where he's testing the car in LA is great and gives a wide range of sounds.
I love me some saving private Ryan but we don't want to depress our customers

I loved Legend on my home theater system.
Pretty much any Ridley Scott movie will do. Gladiator, Black Hawk Down, etc...

Stargate is AWESOME on surround sound...I had it on Laserdisc in college and ran it through my "whole house stereo" system.
