I think Bale would be perfect as Gorr the God Butcher. First, they have a similar intensity and unyielding nature, and Bale would get off on the backstory. But more importantly, Gorr isn't exactly wrong. His worldview makes sense and though he's a villain, his desire to destroy all the gods is logical and comes from his own crappy life and being abandoned by the gods who were supposed to save him and his family.
Gorr is a great villain because he's the center of the story, not Thor, and only a small adjustment in perspective is needed to make him the tragic hero.
