How do they have all these ships and they always get destroyed? What’s the turn around time of building these ships? These body shop business must hate living in this galaxy.
I want to see a show of the day in the life of the first order body shop repair man, they must hate their life

There’s a lot of planets, a lot of resources. Corellia, which you see in “Solo”, was basically a giant planet-sized ship yard.

I'm just a casual fan... but I would assume most production work is done by droids who can work 24/7.

This. Materials come from all over the place and droids do the hard work. Lot of welding out there.

This sounds like a question one Kriegsmarine officer probably posed to another Kriegsmarine officer regarding the Liberty ships.

Randal: The second time around, it wasn't even finished yet. They were still under construction.
Dante: So?
Randal: A construction job of that magnitude would require a helluva lot more manpower than the Imperial army had to offer. I'll bet there were independent contractors working on that thing: plumbers, aluminum siders, roofers.
Dante: Not just Imperials, is what you're getting at.
Randal: Exactly. In order to get it built quickly and quietly they'd hire anybody who could do the job. Do you think the average storm trooper knows how to install a toilet main? All they know is killing and white uniforms.

According to episode 9, the dead emperor can just pull a million out of the ground.

FWIW, most of the Recent Star Wars novels have set out to show just how much production. Was going to. A lot of logistics in those books.

In the Star WArs universe owning a ship is like owning a car as is doing maintence on it. That is why someone like Han Solo don't need a PHD in astrophysic with a shite ton of degrees to learn how his spaceship works.
Pretty much you have your scientist but tech is so streamline that even a kid like anikian can put something together without much trouble.

It’s a galaxy wide empire, they have thousands and thousands of ships. Most ship stuff is automated and run by droids.

It wasn't stock, so he had to pretty much keep up with it himself. A mechanic might look at something, say "what's this shite?" and remove half of his mods.
Mando and the mechanic chick on Tatooine did a restoration (with mods) to his new ride, the Naboo starfighter. Which gets to be an interesting concept; I don't know how old or outdated that fighter was in Ep 1, it's now 30 years older. Naboo seemed fairly wealthy (lots of shiny ships), so it could have been pretty top-end for it's day.
For some reference, F-14's entered Naval service in 1974, and F-15's were first used by the Air Force in 1976. They aren't frontline anymore, but that's 45+ year old tech that is still pretty formidable.

Also, this universe has existed for more than a 1000 years. When I played KOTOR, it took place 1000 years before the latest Star Wars that we saw in the movies and back then light speed travel was very common. You can build a lot of ships and develop an infrastructure over a millennia

Refined needs to do a Star Wars episode.

If you are willing to throw a lot of resources at it you can build a lot of stuff. The US had 36 aircraft carriers in World War II, along with building hundreds of Liberty ships, destroyers, cruisers, a few battleships, and Coast Guard cutters. While also building a massive Air Force and a huge mechanized Army.
