Sesame Street gets my vote. Back in college we had a TV theme CD and we'd blast the Sesame Street theme from our apartment balcony. Everybody who was outside would start singing along. Good times.

The theme from the 60s cartoon Underdog will always be tops for me.

As a kid I thought this one was great:
TOP CAT THEME TUNE (on YouTube) Now I realize this was probably a song Rob and Laura Petrie would have liked.

All of the ones I loved as a kid seem really hokey now.

As a kid I loved the George of the Jungle song (1967), and the train crash that went along with it.

Pinky and the brain and animaniacs had memorable intro songs.

You know what else they had in common? they were both produced by Steven Spielberg. That's just funny.
