I typically waffle between Monty Python and the Holy Grail and Blazing Saddles. Spaceballs has a special place in my heart, though.

Holy Grail then Blazing Saddles for me.

Really close 3rd is Three Amigos. I watched that so many times I can just about quote whole movie start to finish.
