In each case, I have my winner bolded:
1980: Florida State vs. Georgia
1983: Texas vs. Nebraska
1984: Oklahoma vs. BYU
1985: Miami vs. Penn State
1989: Miami vs. Colorado
1990: Georgia Tech vs. Colorado
1991: Washington vs. Miami
1993: West Virginia vs. Nebraska
1994: Penn State vs. Nebraska
1996: Arizona State vs. Florida State
1997: Nebraska vs. Michigan
2000: Washington vs. Oklahoma
2001: Oregon vs. Miami
2003: LSU vs. USC
2007: Hawaii vs. Ohio State (though I think Hawaii could've won)

the only 2 games in history that i REALLY wish we could have seen is '94 penn st vs nebraska and 2008 Florida vs. USC

That was a grossly overrated Ohio State team, but they still would have skullfricked Hawaii. Hawaii would have finished somewhere between 4th and last in the SEC East that year. They were terrible and had no business being on the field with a real team.

I'll only pick out of the ones I was old enough to really remember.

97-Nebraska, although I think it would have been closer than most think.
00-Tossup. In a pure playoff scenario, I think it would have been Miami.
01-Miami. Oregon was good, but that Miami team was loaded.
03-This will be unpopular, but USC in a close one.
07-OSU beats Hi easily. 2006-07 would have been so much better with an LSU-USC title game.

what would give you the slightest inclination of that? They played 2 teams wiht a pulse all year; Boise at home where they won by 12, and UGA in the sugar bowl and lost by 31 in a game that wasn't even that close.

I'll take the opinion of Tom Osborne who emphatically stated that Georgia Tech was easily the superior of the two teams that year.

Georgia may have run 6 offensive plays and 6 defensive plays during that entire game because they didn't need to do anything else. I've seen more complex gameplans in the G-Day game than I saw that night because Hawaii was just nowhere near good enough, especially on the lines of scrimmage. Ohio State would have trounced them.

My 2003 SC/LSU answer is largely based on thinking Oklahoma was overrated and about Michigan's level. Then LSU won a close one basically at home and SC won easily, also basically at home.

I'm not trying to hate on LSU, though. They were a good team. I would much rather have seen LSU/USC instead of the OK team that just got boat raced by K State.

That was not an all-time great Miami team.

But it's close, they both played Nebraska. Washington played Nebraska @ Nebraska which was a helluva tough place to play back then and won 36-21.

Miami played Nebraska in the Orange Bowl and won 22-0.

One of the top 3 offenses of all-time in Penn State while this wasn't '95 Nebraska by any means. They beat Miami in the Orange Bowl by 1 TD after #3 Miami controlled most of the game.

You couldn't stop Penn State from scoring; their TD drives averaged under 2 minutes.

Oklahoma's case is weird that year.

They were hailed as the greatest team of all-time until they got blown-out by K-State in the Big12 Champ game.

They everyone said they sucked.

But they still backed into the BCS champ game. Either their pysche was bruised or they were hungry to prove everybody wrong after all the shite they got after that Big12 title game.

It's so difficult to judge Oklahoma that year.
