I don't think the death was for publicity as much as it was to kill (intended) the gag. They couldn't keep hiding her forever, so the had to get rid of her.

A:
He made it all up and fricked it up the only way he could by killing her off in spectacular fashion (young adult cancer on the same day as his grandmaw dying) thus drawing unnecessary media attention to a person who doesn't exist.
or B:
The "official" story is mostly correct and Te'o is quite literally the dumbest human being on planet earth, while also suffering from severe emotional issues.
